  • 2 large apples (Honeycrisp or Granny Smith), sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard

Instructions

  1. Season pork chops with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add butter, onions, and apples. Cook 5–6 minutes until softened and lightly caramelized.
  4. Stir in thyme, cinnamon, Dijon mustard, and chicken broth. Simmer for 2–3 minutes.
  5. Return pork chops to the skillet. Cover and cook 5–7 minutes until pork is cooked through (145°F/63°C internal temp).
  6. Serve warm with the apple-onion mixture spooned over the pork.

Notes

This dish pairs beautifully with mashed potatoes, wild rice, or roasted vegetables. For a richer flavor, substitute chicken broth with apple cider.
