- 1 lb smoked sausage or kielbasa, sliced
- 2 large sweet potatoes, peeled and cubed
- 1 small red onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried thyme or rosemary
- Salt and black pepper, to taste
- Optional: fresh parsley for garnish

- Preheat oven to 400°F (200°C).
- Add sweet potatoes and onion to a large bowl. Drizzle with olive oil and season with garlic powder, paprika, thyme, salt, and pepper.
- Spread vegetables evenly on a baking sheet.
- Roast for 20 minutes, then remove from oven and add sliced sausage.
- Toss everything together and return to oven.
- Roast an additional 15–20 minutes, until sweet potatoes are tender and sausage is lightly browned.
- Garnish with fresh parsley if desired and serve warm.
Notes
You can use chicken sausage, turkey sausage, or spicy sausage for variety. For extra veggies, add bell peppers or Brussels sprouts during the last 20 minutes of roasting.
