Instructions

  1. Line two baking sheets with parchment paper or silicone mats. Sift powdered sugar and almond flour together twice for a smooth texture.
  2. In a clean bowl, beat egg whites until foamy, then gradually add granulated sugar. Continue beating to stiff peaks. Add red food coloring and gently fold in the dry ingredients until the batter flows like lava.
  3. Pipe small circles onto baking sheets and tap to release air bubbles. Let rest for 30–45 minutes until the surface forms a skin.
  4. Bake at 300Β°F (150Β°C) for 13–15 minutes. Cool completely before removing from mats.
  5. For the filling, beat butter until creamy. Add powdered sugar, vanilla, and cream; beat until smooth and fluffy.
  6. Pair macaron shells by size. Pipe frosting onto one half and sandwich together.
  7. Decorate with melted white chocolate or icing for Santa’s beard and hat trim. Add chocolate chips for eyes and a red sprinkle for the nose.
  8. Refrigerate at least 24 hours before serving for best texture.
