- Red gel food coloring

- Mini marshmallows or white chocolate for hat trim (optional)
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone mat.
- Sift together powdered sugar and almond flour to remove lumps.
- In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form. Add red food coloring to achieve desired Santa hat color.
- Gently fold almond flour mixture into the egg whites until smooth and glossy.
- Pipe small rounds onto the prepared baking sheet. Tap the tray lightly to remove air bubbles and let sit for 30–60 minutes to form a skin.
- Bake for 15–18 minutes, then cool completely.
- Fill with white buttercream, decorate with black gel for eyes, and add marshmallows or white chocolate for hat trim to complete Santa’s face.
