  • Red gel food coloring
  • White buttercream or royal icing
  • Black decorating gel for eyes
  • Mini marshmallows or white chocolate for hat trim (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Sift together powdered sugar and almond flour to remove lumps.
  3. In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form. Add red food coloring to achieve desired Santa hat color.
  4. Gently fold almond flour mixture into the egg whites until smooth and glossy.
  5. Pipe small rounds onto the prepared baking sheet. Tap the tray lightly to remove air bubbles and let sit for 30–60 minutes to form a skin.
