Ingredients

  • 34 lb beef roast (ribeye, sirloin, or chuck)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped (or 1 tbsp dried)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1/2 cup beef broth

Instructions

Instructions

  1. Preheat oven: Set to 375°F (190°C).
  2. Prepare roast: Pat beef dry and rub with olive oil.
  3. Season: Mix garlic, rosemary, salt, pepper, and onion powder, then rub all over the roast.
  4. Roast: Place in a roasting pan and pour beef broth around the bottom.
  5. Bake: Roast for 50–70 minutes (depending on size) until desired doneness is reached.
  6. Rest: Let rest for 10–15 minutes before slicing.
  7. Serve: Slice and serve with pan juices.

Notes

Use a meat thermometer for best results: 130°F for medium-rare, 140°F for medium. Letting the meat rest ensures juicy slices.
