These Rhubarb Oat Bars feature a buttery oat crust and crumble, layered with a sweet-tart rhubarb filling. They’re simple to make and perfect for spring snacking or dessert.

- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup brown sugar, packed
- 3/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups chopped fresh rhubarb
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
- Make Crust/Crumble: In a large bowl, mix flour, oats, brown sugar, salt, and melted butter until crumbly. Stir in vanilla. Press half the mixture firmly into the pan for the crust.
- Prepare Filling: In a medium bowl, toss rhubarb with sugar, cornstarch, and lemon juice until coated.
- Assemble: Spread rhubarb mixture evenly over crust. Sprinkle remaining oat mixture over the top.
- Bake: Bake for 35–40 minutes or until golden and bubbly. Cool completely before slicing into bars.
Notes
For extra flavor, add a pinch of cinnamon to the oat mixture. These bars keep well in the fridge for up to 4 days, or freeze for up to 2 months.
