  • 1 1/2 cups rolled oats
  • 1 cup brown sugar, packed
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 cups chopped fresh rhubarb
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
  2. Make Crust/Crumble: In a large bowl, mix flour, oats, brown sugar, salt, and melted butter until crumbly. Stir in vanilla. Press half the mixture firmly into the pan for the crust.
  3. Prepare Filling: In a medium bowl, toss rhubarb with sugar, cornstarch, and lemon juice until coated.
  4. Assemble: Spread rhubarb mixture evenly over crust. Sprinkle remaining oat mixture over the top.
  5. Bake: Bake for 35–40 minutes or until golden and bubbly. Cool completely before slicing into bars.

Notes

For extra flavor, add a pinch of cinnamon to the oat mixture. These bars keep well in the fridge for up to 4 days, or freeze for up to 2 months.
