- 2 tbsp cornstarch

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract

- Make crust: Mix flour and powdered sugar, cut in butter until crumbly, then press into pan.
- Pre-bake: Bake crust for 12–15 minutes until lightly golden.
- Prepare rhubarb: Toss rhubarb with sugar and cornstarch.
- Make cream layer: Beat cream cheese, sugar, egg, and vanilla until smooth.
- Assemble: Spread rhubarb over crust, then pour cream cheese mixture on top.
- Bake: Bake 30–35 minutes until set.
- Cool: Let cool completely before slicing into bars.
Notes
Chill before cutting for cleaner slices. You can add strawberries to the rhubarb layer for a sweeter flavor.
