- Combine wet ingredients: In another bowl, mix mashed bananas, melted butter, brown sugar, eggs, vanilla, and milk if using.
- Stir until smooth and well combined.
- Combine: Gradually add dry ingredients into the wet mixture and stir until just combined.
- Fold in chopped rhubarb gently.
- Assemble: Pour batter into prepared loaf pan and smooth the top.
- Sprinkle brown sugar and cinnamon topping if desired.
- Bake: Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for the best sweetness and texture. The rhubarb adds a fresh tart contrast that balances the banana flavor beautifully.
