- 6 cups mixed salad greens (romaine, arugula, spinach)
- 1 cup diced apples or pears
- 1/2 cup dried cranberries
- 1/3 cup toasted pecans or walnuts
- 1/4 cup crumbled feta or goat cheese (optional)
- For dressing: 3 tbsp olive oil, 2 tbsp fresh orange juice, 1 tbsp apple cider vinegar, 1 tsp honey, salt & pepper to taste
Instructions
- In a large salad bowl, combine mixed greens, diced apples or pears, dried cranberries, and toasted nuts.
- Add crumbled feta or goat cheese if desired.
- In a small bowl, whisk together olive oil, orange juice, apple cider vinegar, honey, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately as a light and refreshing side for Thanksgiving.
Notes
