Ingredients

  • 6 cups mixed salad greens (romaine, arugula, spinach)
  • 1 cup diced apples or pears
  • 1/2 cup dried cranberries
  • 1/3 cup toasted pecans or walnuts
  • 1/4 cup crumbled feta or goat cheese (optional)
  • For dressing: 3 tbsp olive oil, 2 tbsp fresh orange juice, 1 tbsp apple cider vinegar, 1 tsp honey, salt & pepper to taste

Instructions

  1. In a large salad bowl, combine mixed greens, diced apples or pears, dried cranberries, and toasted nuts.
  2. Add crumbled feta or goat cheese if desired.
  3. In a small bowl, whisk together olive oil, orange juice, apple cider vinegar, honey, salt, and pepper to make the dressing.
