- Prepare crust: Mix graham cracker crumbs, melted butter, and sugar in a bowl.
- Press about 1 tablespoon of crust mixture into each liner.
- Make filling: Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing after each addition. Stir in vanilla and sour cream.
- Fill cupcake liners nearly full with cheesecake batter.
- Bake: Bake for 18–20 minutes until centers are slightly set.
- Cool completely, then refrigerate for at least 2 hours.
- Top each mini cheesecake with whipped topping, strawberries, and blueberries before serving.
Notes
For extra patriotic flair, add red, white, and blue sprinkles on top. These mini cheesecakes can be made a day ahead and stored chilled until serving.
