- 1 sheet puff pastry, thawed
- 1 cup fresh raspberries
- 1 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract

- Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface to smooth creases. Cut into rectangles or desired shapes.
- Place pastry pieces on a baking sheet lined with parchment paper. Prick all over with a fork to prevent puffing unevenly.
- Bake for 12–15 minutes or until golden brown and crisp. Let cool completely.
- In a bowl, whip heavy cream with sugar and vanilla until stiff peaks form.
- To assemble, place one puff pastry layer on a serving plate. Spread or pipe a layer of whipped cream, then top with raspberries.
- Top with a second puff pastry layer, add more cream and raspberries. Repeat if making multiple layers.
- Dust with powdered sugar before serving, if desired. Serve immediately for crisp puff pastry.
Notes
Optional: Use a pastry bag for a cleaner cream layer. For added flavor, drizzle raspberry sauce or jam between layers. Best served the same day to keep pastry crisp.
