  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • Optional: powdered sugar for dusting

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface to smooth creases. Cut into rectangles or desired shapes.
  2. Place pastry pieces on a baking sheet lined with parchment paper. Prick all over with a fork to prevent puffing unevenly.
  3. Bake for 12–15 minutes or until golden brown and crisp. Let cool completely.
  4. In a bowl, whip heavy cream with sugar and vanilla until stiff peaks form.
  5. To assemble, place one puff pastry layer on a serving plate. Spread or pipe a layer of whipped cream, then top with raspberries.
  6. Top with a second puff pastry layer, add more cream and raspberries. Repeat if making multiple layers.
  7. Dust with powdered sugar before serving, if desired. Serve immediately for crisp puff pastry.

Notes

Optional: Use a pastry bag for a cleaner cream layer. For added flavor, drizzle raspberry sauce or jam between layers. Best served the same day to keep pastry crisp.
