- Make cream: Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Assemble: Layer pastry, whipped cream, and raspberry mixture. Repeat layers.
- Top: Finish with a pastry layer and dust with powdered sugar.
- Chill: Refrigerate 30–60 minutes before serving for best structure.
Notes
Use chilled puff pastry for best puff and crisp layers. Assemble close to serving time to keep pastry crisp. You can substitute strawberries or blueberries if desired.
