  • 1 1/2 lbs boneless chicken thighs or breasts, cut into bite-size pieces
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup plain yogurt
  • Salt and pepper to taste
  • Fresh cilantro for garnish

  1. Season chicken with salt and pepper.
  2. Heat oil and 1 tbsp butter in a large skillet over medium heat. Sear chicken until lightly browned. Remove and set aside.
  3. Add remaining butter, then sauté onion until soft. Stir in garlic and ginger for 30 seconds.
  4. Add garam masala, paprika, turmeric, and cumin. Cook briefly to release aroma.
  5. Pour in crushed tomatoes and simmer 8–10 minutes.
  6. Lower heat and stir in cream and yogurt until smooth.
  7. Return chicken to the skillet and simmer 10–12 minutes until cooked through and sauce thickens.
  8. Adjust seasoning, garnish with cilantro, and serve warm.

Notes

Serve with rice or naan bread. For extra richness, add a splash of cream before serving. Adjust spice levels by adding chili powder or cayenne if desired.
