- 1 1/2 lbs boneless chicken thighs or breasts, cut into bite-size pieces
- 2 tbsp butter
- 1 tbsp oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tsp garam masala
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 1/2 cup plain yogurt
- Salt and pepper to taste
- Fresh cilantro for garnish

- Season chicken with salt and pepper.
- Heat oil and 1 tbsp butter in a large skillet over medium heat. Sear chicken until lightly browned. Remove and set aside.
- Add remaining butter, then sauté onion until soft. Stir in garlic and ginger for 30 seconds.
- Add garam masala, paprika, turmeric, and cumin. Cook briefly to release aroma.
- Pour in crushed tomatoes and simmer 8–10 minutes.
- Lower heat and stir in cream and yogurt until smooth.
- Return chicken to the skillet and simmer 10–12 minutes until cooked through and sauce thickens.
- Adjust seasoning, garnish with cilantro, and serve warm.
Notes
Serve with rice or naan bread. For extra richness, add a splash of cream before serving. Adjust spice levels by adding chili powder or cayenne if desired.
