- 1 cup dried red or green lentils, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp smoked paprika
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 6 cups vegetable broth
- 2 tbsp olive oil
- Juice of 1/2 lemon (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook for 4–5 minutes until softened.
- Stir in cumin, turmeric, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
- Adjust seasoning and stir in lemon juice if desired. Garnish with fresh parsley before serving.
Notes
This soup is vegan, gluten-free, and freezer-friendly. Red lentils cook fastest, making them perfect for a quick meal.
