Ingredients

  • 1 cup dried red or green lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp smoked paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 6 cups vegetable broth
  • 2 tbsp olive oil
  • Juice of 1/2 lemon (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook for 4–5 minutes until softened.
  2. Stir in cumin, turmeric, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  3. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
  4. Adjust seasoning and stir in lemon juice if desired. Garnish with fresh parsley before serving.

Notes

This soup is vegan, gluten-free, and freezer-friendly. Red lentils cook fastest, making them perfect for a quick meal.
