  • 4 large flour tortillas
  • 4 large eggs
  • 2 tbsp milk
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • 2 tbsp butter or oil
  • Optional add-ins: cooked bacon, sausage, ham, bell peppers, or onions

  1. Whisk eggs, milk, salt, and pepper in a bowl.
  2. Scramble eggs in a skillet over medium heat until just set. Remove from pan.
  3. Heat a clean skillet over medium heat and melt a little butter.
  4. Place one tortilla in the skillet and sprinkle with cheese.
  5. Add scrambled eggs and any optional add-ins.
  6. Top with more cheese and another tortilla.
  7. Cook 2–3 minutes per side until golden brown and cheese is melted.
  8. Remove from skillet, slice into wedges, and serve warm.

Notes

Serve with salsa, sour cream, or avocado. For meal prep, wrap cooked quesadillas in foil and reheat in a skillet or air fryer.
