- 4 large eggs
- 2 tbsp milk
- Salt and pepper to taste
- 1 1/2 cups shredded cheddar or Mexican-blend cheese
- 2 tbsp butter or oil
- Optional add-ins: cooked bacon, sausage, ham, bell peppers, or onions

- Whisk eggs, milk, salt, and pepper in a bowl.
- Scramble eggs in a skillet over medium heat until just set. Remove from pan.
- Heat a clean skillet over medium heat and melt a little butter.
- Place one tortilla in the skillet and sprinkle with cheese.
- Add scrambled eggs and any optional add-ins.
- Top with more cheese and another tortilla.
- Cook 2–3 minutes per side until golden brown and cheese is melted.
- Remove from skillet, slice into wedges, and serve warm.
Notes
Serve with salsa, sour cream, or avocado. For meal prep, wrap cooked quesadillas in foil and reheat in a skillet or air fryer.
