Soft and spiced pumpkin cookies with the classic flavors of pumpkin pie — perfect for fall and holiday baking.

- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup canned pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- Optional: 1/2 cup chopped pecans or chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, oil, granulated sugar, and brown sugar until smooth.
- Mix in pumpkin puree, egg, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and all spices.
- Gradually combine dry ingredients with wet ingredients. Fold in pecans or chocolate chips if using.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
For extra spice, sprinkle a little cinnamon sugar on top before baking. Store in an airtight container for up to 3 days.
