Description

Soft and spiced pumpkin cookies with the classic flavors of pumpkin pie — perfect for fall and holiday baking.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • Optional: 1/2 cup chopped pecans or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, oil, granulated sugar, and brown sugar until smooth.
  3. Mix in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and all spices.
  5. Gradually combine dry ingredients with wet ingredients. Fold in pecans or chocolate chips if using.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10–12 minutes or until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.

Notes

For extra spice, sprinkle a little cinnamon sugar on top before baking. Store in an airtight container for up to 3 days.
