  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk or non-dairy milk
  • 1 tsp vanilla extract
  • For the Cream Cheese Filling:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
  2. Make cream cheese filling: In a small bowl, mix cream cheese, sugar, and vanilla until smooth. Set aside.
  3. Prepare muffin batter: In a large bowl, whisk together flour, sugars, baking soda, salt, and spices. In another bowl, whisk eggs, pumpkin, oil, milk, and vanilla until smooth. Pour wet ingredients into dry and stir until just combined.
  4. Assemble muffins: Fill each muffin cup about 2/3 full with batter. Add 1 tbsp of cream cheese mixture to the center of each. Top with a small spoonful of batter if desired.
  5. Bake: Bake for 18–22 minutes or until a toothpick inserted into the muffin (not the filling) comes out clean.
  6. Cool and serve: Let muffins cool in pan for 5 minutes, then transfer to a wire rack. Enjoy warm or chilled.

Notes

Store in the refrigerator in an airtight container for up to 4 days. For a bakery-style touch, sprinkle the tops with coarse sugar or cinnamon sugar before baking.
