- 4 large eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 1 can (15 oz) pumpkin puree
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, beat together eggs, sugar, oil, and pumpkin until smooth.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Add to pumpkin mixture and stir until just combined.
- Pour batter into the prepared pan and spread evenly. Bake for 25–30 minutes, until a toothpick comes out clean.
- For frosting: Beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla, mixing until smooth.
- Once bars are completely cooled, spread frosting evenly on top. Slice into squares and serve.
Notes
For extra flavor, sprinkle the frosted bars with cinnamon sugar or chopped pecans. These bars store well in the fridge for up to 5 days.
