- 1 medium onion, chopped
- 2 celery stalks, diced
- 2 carrots, diced
- 4 cups chicken or vegetable broth
- 2 cups whole milk or half-and-half
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, bacon, chives
Instructions
- In a large pot, melt butter over medium heat. Add onion, celery, and carrots; cook until softened.
- Stir in flour and cook for 1 minute to form a roux.
- Gradually whisk in broth, then add potatoes. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Stir in milk or half-and-half, and season with salt and pepper. Simmer until creamy.
- Serve hot, topped with cheese, bacon, or fresh chives if desired.
Notes
For extra creaminess, mash a few potatoes in the pot before serving. This soup is also freezer-friendly for up to 2 months.
