Ingredients

  • 1 medium onion, chopped
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 4 cups chicken or vegetable broth
  • 2 cups whole milk or half-and-half
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, bacon, chives

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, celery, and carrots; cook until softened.
  2. Stir in flour and cook for 1 minute to form a roux.
  3. Gradually whisk in broth, then add potatoes. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Stir in milk or half-and-half, and season with salt and pepper. Simmer until creamy.
  6. Serve hot, topped with cheese, bacon, or fresh chives if desired.

Notes
