  • 2 tbsp butter
  • 1/2 tsp salt

  3. Blend (optional): For a creamy texture, use an immersion blender to partially blend the soup, leaving some chunks.
  4. Add cheese & cream: Stir in cheddar cheese and cream/milk until melted and smooth.
  5. Season: Add salt, pepper, and paprika to taste. Adjust thickness with extra milk or broth if needed.
  6. Serve: Ladle soup into bowls and top with optional garnishes.

Notes

You can substitute sharp cheddar with smoked or mild cheddar for different flavor. For extra richness, add a little cream cheese while blending.
