- Add vegetables & broth: Add potatoes, broccoli, and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until vegetables are tender.
- Blend (optional): For a creamy texture, use an immersion blender to partially blend the soup, leaving some chunks.
- Add cheese & cream: Stir in cheddar cheese and cream/milk until melted and smooth.
- Season: Add salt, pepper, and paprika to taste. Adjust thickness with extra milk or broth if needed.
- Serve: Ladle soup into bowls and top with optional garnishes.
Notes
You can substitute sharp cheddar with smoked or mild cheddar for different flavor. For extra richness, add a little cream cheese while blending.
