Ingredients

  • 1 ½ cups raw pumpkin seeds (cleaned and dried)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp paprika
  • 2 tbsp grated parmesan cheese
  • ¼ tsp salt (adjust to taste)

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss pumpkin seeds with olive oil, garlic powder, onion powder, oregano, basil, paprika, and salt until coated.
  3. Spread seeds evenly on the baking sheet and roast for 25–30 minutes, stirring halfway through, until golden and crisp.
  4. Remove from oven and immediately toss with parmesan cheese.
  5. Let cool completely before serving or storing in an airtight container.
