- 1 tbsp olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 (14.5 oz) cans diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions

- Cook beef: In a large pot, heat olive oil and brown ground beef over medium-high heat. Drain excess fat.
- Sauté vegetables: Add onion, bell pepper, and garlic. Cook 3–4 minutes until softened.
- Add tomatoes & beans: Stir in diced tomatoes, tomato sauce, kidney beans, and black beans.
- Season: Add chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Stir well.
- Simmer: Reduce heat to medium-low and simmer 20–25 minutes to allow flavors to meld. Stir occasionally.
- Serve: Ladle chili into bowls and top with shredded cheese, sour cream, or green onions if desired.
Notes
You can make this chili a day ahead for deeper flavor. Add extra vegetables like corn or zucchini for more texture. Adjust spice level to taste.
