  • 1 1/2 lb boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice, uncooked
  • 1 can (8 oz) pineapple chunks, drained (reserve juice)
  • 1 1/2 cups chicken broth
  • 1/3 cup pineapple juice (from the can)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 cup frozen peas (optional)
  • Salt and pepper, to taste
  • Optional garnish: green onions or sesame seeds

  1. Spray the inside of a 6-quart crockpot with cooking spray.
  2. Place chicken in the bottom of the crockpot.
  3. In a bowl, whisk together chicken broth, pineapple juice, soy sauce, brown sugar, garlic powder, and ground ginger.
  4. Pour the mixture over the chicken.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through.
  6. Remove chicken and shred or cut into bite-sized pieces.
  7. Add uncooked rice and reserved pineapple chunks to the crockpot. Stir well.
  8. Return chicken to the crockpot, cover, and cook on HIGH for an additional 25–30 minutes, until rice is tender and liquid is absorbed.
  9. Stir in frozen peas if using, and cook 5 more minutes.
  10. Serve warm, garnished with green onions or sesame seeds.

Notes

For extra flavor, you can lightly sear the chicken before slow cooking. Adjust sweetness by adding more or less brown sugar. Leftovers keep well in the fridge for 2–3 days.
