  • 1 1/2 cups BBQ sauce
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

  1. Make marinade: In a bowl, whisk together BBQ sauce, soy sauce, honey, olive oil, garlic, smoked paprika, ginger, and black pepper.
  2. Marinate pork: Add pork cubes to the marinade and refrigerate for at least 1–4 hours (or overnight for best flavor).
  3. Prep skewers: If using wooden skewers, soak in water for 20–30 minutes.
  4. Assemble skewers: Thread pork, pineapple, bell peppers, and red onion onto skewers, alternating ingredients.
  5. Preheat grill: Heat grill to medium-high and lightly oil grates.
  6. Grill skewers: Cook for 10–12 minutes, turning every few minutes and basting with extra BBQ sauce, until pork reaches 145°F (63°C).
  7. Rest: Remove from grill and let rest for 5 minutes.
  8. Serve: Garnish with fresh cilantro or green onions and serve warm.

Notes

For extra flavor, use a smoky or hickory BBQ sauce. Chicken can be substituted for pork if desired. Serve with rice, grilled corn, or a fresh green salad for a complete meal.
