- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup unsalted butter, melted
- 2 cups fresh or canned peaches, sliced
- 1 tsp lemon juice
- 1/4 cup granulated sugar (for peach layer)
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar (for cream layer)

- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine flour, oats, brown sugar, salt, and baking powder. Stir in melted butter until crumbly. Press half into the bottom of the prepared pan to form the base.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Spread over the crust layer.
- In a small bowl, toss peach slices with lemon juice and granulated sugar. Layer evenly over the cream cheese mixture.
- Sprinkle remaining crumb mixture over the top.
- Bake for 35–40 minutes until golden and set. Let cool completely before cutting into bars.
Notes
Optional: Add a sprinkle of cinnamon to the crumb topping for extra flavor. Store bars in an airtight container in the fridge for up to 4 days.
