- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh or canned peaches, diced
- 1/4 cup granulated sugar (for peaches)
- 1 tbsp lemon juice
- Optional: 1/2 tsp cinnamon for topping

- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Beat eggs and vanilla together, then mix into the crumb mixture until a dough forms.
- Press 2/3 of the dough into the prepared pan to form the base.
- In a separate bowl, toss peaches with 1/4 cup sugar and lemon juice. Spread evenly over the base.
- Crumble remaining dough over the peach layer. Sprinkle with cinnamon if desired.
- Bake 35–40 minutes until golden brown and set. Cool completely before cutting into bars.
Notes
Use fresh, ripe peaches for best flavor or substitute with frozen peaches (thawed and drained). These bars can be stored in an airtight container at room temperature for up to 3 days. For extra creaminess, drizzle with a simple vanilla glaze before serving.
