  3. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Gently fold in diced peaches.
  5. In a separate bowl, whisk together cream, egg, and vanilla extract.
  6. Pour wet ingredients into the flour mixture and gently stir until a soft dough forms.
  7. Shape the scones: Transfer dough to a floured surface and shape into a circle about 1 inch thick. Cut into wedges.
  8. Place scones on the baking sheet and bake for 18–22 minutes until golden.
