  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Peach Cobbler Layer

  • 3 cups fresh peaches, peeled and sliced

  • 1/4 tsp nutmeg
  • 1 tbsp cornstarch

For the Cobbler Topping

  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

Instructions

  1. Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press firmly into a lined 9×13-inch baking pan. Bake for 10 minutes and let cool slightly.
  2. Make the cheesecake layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream until creamy.
  3. Prepare the peaches: Toss sliced peaches with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch until evenly coated.
  4. Assemble the bars: Spread cheesecake filling over the crust. Arrange the peach mixture evenly on top.
  5. Create the cobbler topping: Mix flour, oats, brown sugar, and cinnamon. Cut in cold butter until crumbly. Sprinkle evenly over the peaches.
  6. Bake: Bake for 45-50 minutes until the topping is golden and the cheesecake layer is set.
  7. Chill and serve: Cool completely, then refrigerate for at least 3 hours before slicing into bars.

Notes

For clean slices, chill the cheesecake bars completely before cutting. Fresh peaches provide the best flavor, but canned peaches can be used if well drained. Store leftovers covered in the refrigerator for up to 5 days.
