  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup peach puree (fresh or canned peaches blended)
  • 1/4 cup milk
  • 2 tbsp sparkling juice or non-alcoholic champagne substitute
  • Buttercream:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 23 tbsp sparkling juice or champagne substitute
  • 2 tbsp peach puree
  • Pinch of salt

  1. Preheat oven: Set oven to 175°C / 350°F and line a cupcake pan with liners.
  2. Mix dry ingredients: Whisk flour, baking powder, and salt.
  3. Cream butter & sugar: Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then vanilla extract.
  5. Mix in peach puree and milk until smooth.
  6. Gradually add dry ingredients and mix just until combined.
  7. Stir in sparkling juice gently.
  8. Fill liners 2/3 full and bake 18–20 minutes until a toothpick comes out clean.
  9. Cool completely before frosting.
  10. Make buttercream: Beat butter until creamy, add powdered sugar, peach puree, sparkling juice, and salt. Whip until fluffy.
  11. Pipe frosting onto cooled cupcakes and garnish with small peach slices if desired.

Notes

For stronger peach flavor, brush cooled cupcakes lightly with peach syrup before frosting. Chill frosting briefly if too soft before piping. Store in refrigerator but bring to room temperature before serving for best texture.
