- 12 oz pasta (penne, fettuccine, or spaghetti)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Optional: red pepper flakes or fresh basil

- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add broccoli, bell peppers, and zucchini. Cook 4–5 minutes until tender-crisp.
- Stir in cherry tomatoes and cook 1–2 minutes more.
- Add cooked pasta to the skillet and toss with vegetables.
- Add reserved pasta water as needed for a light sauce.
- Season with salt, pepper, and optional red pepper flakes.
- Remove from heat and sprinkle with Parmesan cheese. Garnish with fresh basil if desired.
Notes
Use any seasonal vegetables you have on hand, such as asparagus, peas, or carrots. For a richer version, add a splash of cream or a knob of butter before serving.
