- 1 lb ground beef (or turkey)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (10 oz) can Rotel (tomatoes with green chilies)
- 1 packet taco seasoning
- 1 tsp chili powder (optional)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro
Instructions
- In a large pot, cook ground beef with onion and garlic over medium heat until browned. Drain excess fat if necessary.
- Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, and Rotel.
- Stir in taco seasoning, chili powder, salt, and pepper.
- Bring soup to a boil, then reduce heat and simmer for 20–25 minutes.
- Ladle into bowls and serve with optional toppings like cheese, sour cream, or tortilla chips.
