Description

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (10 oz) can Rotel (tomatoes with green chilies)
  • 1 packet taco seasoning
  • 1 tsp chili powder (optional)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro

Instructions

  1. In a large pot, cook ground beef with onion and garlic over medium heat until browned. Drain excess fat if necessary.
  2. Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, and Rotel.
  3. Stir in taco seasoning, chili powder, salt, and pepper.
  4. Bring soup to a boil, then reduce heat and simmer for 20–25 minutes.
  5. Ladle into bowls and serve with optional toppings like cheese, sour cream, or tortilla chips.

Notes
