- 1 lb (450g) ground beef
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes (optional)
- 2 cups elbow macaroni
- 1 cup heavy cream or milk
- 1 1/2 cups shredded cheddar cheese
- 1 tbsp ketchup
- 1 tsp mustard
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional toppings: pickles, green onions, extra cheese

- Cook beef: In a large pot, heat olive oil and cook ground beef until browned. Drain excess fat if needed.
- Sauté aromatics: Add onion and cook 2–3 minutes until softened. Stir in garlic and cook 30 seconds.
- Add broth & pasta: Pour in beef broth and diced tomatoes (if using). Bring to a boil, then add macaroni.
- Cook pasta: Reduce heat and simmer 8–10 minutes until pasta is tender.
- Add cream & cheese: Stir in heavy cream, cheddar cheese, ketchup, mustard, paprika, salt, and pepper. Cook until cheese is melted and soup is creamy.
- Serve: Ladle into bowls and top with pickles, green onions, or extra cheese if desired.
Notes
For a lighter version, use ground turkey and milk instead of cream. Add diced potatoes or extra veggies for more texture.
