- 1 lb (450g) ground beef or Italian sausage
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or beef broth
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8–10 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley or basil for garnish

- Cook meat: In a large pot, heat olive oil and cook ground beef or sausage until browned. Drain excess fat if needed.
- Sauté aromatics: Add onion and cook 2–3 minutes until softened. Stir in garlic and cook 30 seconds.
- Add liquids & seasoning: Stir in crushed tomatoes, broth, tomato paste, basil, oregano, salt, and pepper. Bring to a boil.
- Add noodles: Stir in broken lasagna noodles. Reduce heat and simmer 10–12 minutes until noodles are tender.
- Serve: Ladle soup into bowls and top each with a dollop of ricotta, shredded mozzarella, and Parmesan cheese.
- Garnish: Sprinkle with fresh parsley or basil and serve warm.
Notes
For extra creaminess, stir a little ricotta directly into the soup before serving. You can substitute ground turkey for a lighter option.
