Description
A creamy one-pot pasta inspired by the flavors of French onion soup—caramelized onions, garlic, thyme, and beef broth meld with pasta for a rich and cozy dish topped with melted cheese.

- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 4 cups beef broth
- 2 cups water
- 12 oz pasta (penne or rigatoni work well)
- 1/2 cup dry white wine (optional)
- 1 cup heavy cream
- 1 1/2 cups shredded Gruyère or Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring often, until onions are caramelized and golden brown, about 25–30 minutes.
- Add garlic and thyme, cooking for another 1–2 minutes.
- Deglaze with white wine (if using), scraping any browned bits from the bottom of the pot.
- Stir in beef broth, water, and pasta. Bring to a boil, then reduce to a simmer. Cook uncovered until pasta is al dente and most of the liquid is absorbed, about 10–12 minutes.
- Stir in heavy cream and half of the shredded cheese. Mix until creamy and smooth.
- Top with remaining cheese, cover, and let melt for 2–3 minutes. Garnish with parsley and serve warm.
Notes
For extra depth, use homemade beef broth. You can also substitute Gruyère with mozzarella or Parmesan for a slightly different flavor profile.
