- 4 boneless chicken breasts or thighs
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup balsamic vinegar
- 2 tbsp honey
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cherry tomatoes
- 1 cup broccoli florets or green beans
- Optional: 1/4 cup shredded mozzarella or Parmesan
- Fresh basil for garnish

- Season chicken: Pat dry and season with salt, pepper, and Italian seasoning.
- Sear: Heat olive oil in a large skillet over medium heat. Cook chicken 4–5 minutes per side until golden. Remove and set aside.
- Make sauce: In the same pan, sauté garlic for 30 seconds, then add balsamic vinegar and honey. Simmer 2–3 minutes.
- Add veggies: Stir in tomatoes and broccoli (or green beans).
- Combine: Return chicken to the pan and spoon sauce over.
- Cook: Cover and cook for 8–10 minutes until chicken is fully cooked and vegetables are tender.
- Finish: Add cheese if using and let melt. Garnish with fresh basil.
- Serve: Serve hot directly from the pan.
Notes
You can swap vegetables based on what you have—zucchini or asparagus work great. For a thicker sauce, simmer a few extra minutes before adding the chicken back.
