  • Author: recipeinspire
  • Total Time: 1 hour
  • Yield: 6 servings 1x

Description

This Old Fashioned Rhubarb Crisp is a timeless dessert that highlights the tartness of rhubarb with a buttery, golden oat topping. Simple, rustic, and incredibly satisfying—just like Grandma used to make.

Ingredients

Scale
  • 4 cups chopped rhubarb
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold butter, cut into small cubes

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. Make the Filling: In a bowl, combine rhubarb, granulated sugar, 3 tablespoons flour, and cinnamon (if using). Spread mixture evenly into the prepared baking dish.
  3. Make the Topping: In another bowl, mix oats, 1/2 cup flour, brown sugar, and butter. Cut butter into dry ingredients using a pastry cutter or fork until crumbly.
  4. Assemble: Sprinkle oat topping evenly over rhubarb mixture.
  5. Bake: Bake for 40–45 minutes, until topping is golden and filling is bubbling around the edges.
  6. Cool & Serve: Let cool slightly before serving. Delicious warm with vanilla ice cream or whipped cream.

Notes

You can replace part of the rhubarb with chopped strawberries for a sweeter flavor. Store leftovers in the fridge for up to 3 days and reheat before serving.
