- 1/2 cup pumpkin puree
- 6 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1 cup graham cracker crumbs (plus more for coating)
- 6 oz white or dark chocolate (optional for dipping)
- Pinch of salt
Instructions
- Make the filling: In a bowl, beat cream cheese until smooth. Add pumpkin puree, powdered sugar, vanilla, pumpkin pie spice, and salt. Mix until fully combined.
- Fold in crumbs: Stir in graham cracker crumbs until dough is thick enough to scoop.
- Chill: Refrigerate the mixture for 20–30 minutes to firm up.
- Form balls: Scoop about 1 tablespoon of dough and roll into balls. Place on a parchment-lined tray.
- Optional coating: Roll in extra graham crumbs or dip in melted chocolate. Place back on the tray.
- Set: Chill for another 15–20 minutes until set. Store in the fridge in an airtight container.
Notes
For easier dipping, freeze the balls for 10 minutes before coating. Add a pinch of cinnamon or nutmeg for extra warmth. Keep refrigerated and enjoy within 5 days.
