- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can Rotel (tomatoes with green chilies)
- 1 (8 oz) can tomato sauce
- 2 cups beef or chicken broth
- 1 (1 oz) packet taco seasoning (or homemade blend)
- 1 (1 oz) packet ranch seasoning mix (optional, for extra flavor)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, jalapeños, cilantro
Instructions
- In a skillet, cook the ground beef with onion and garlic until browned. Drain excess fat if needed.
- Transfer the beef mixture to the slow cooker.
- Add beans, corn, diced tomatoes, Rotel, tomato sauce, broth, taco seasoning, and ranch seasoning.
- Stir everything together until well combined.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
Notes
For extra richness, stir in a block of cream cheese 30 minutes before serving. This recipe also freezes beautifully for easy meal prep!
