- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 cup canned pumpkin puree
- ¾ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, mix pumpkin, brown sugar, oil, eggs, and vanilla until smooth.
- Add dry ingredients to wet ingredients and stir until just combined. Fold in nuts if using.
- Pour batter into prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow bread to cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra moisture, brush the top with melted butter after baking. Store tightly wrapped at room temperature for up to 4 days.
