  • ¼ tsp ground cloves
  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, mix pumpkin, brown sugar, oil, eggs, and vanilla until smooth.
  4. Add dry ingredients to wet ingredients and stir until just combined. Fold in nuts if using.
  5. Pour batter into prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow bread to cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
