- 2 cups cake flour
- 1 1/2 cups sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3 large eggs
- 3/4 cup whole milk
- 1 tbsp vanilla extract
- 1/4 cup rainbow sprinkles
- Frosting: 8 oz cream cheese, 1/2 cup butter, 2 cups powdered sugar, 1 tsp vanilla
- Milk Soak: 1/2 cup milk + 1 tsp vanilla extract
- Cake Crumbs: 1/2 cup sugar, 1 1/2 tbsp brown sugar, 3/4 cup cake flour, 1/4 tsp salt, 2 tbsp butter, 1 tbsp sprinkles
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease and line three 6-inch round cake pans.
- In a large bowl, cream butter and sugar until fluffy. Add eggs and vanilla, then mix in flour, baking powder, and salt alternately with milk. Fold in sprinkles.
- Divide batter evenly between pans and bake 20β25 minutes or until golden. Cool completely.
- Make the cake crumbs: Mix sugars, flour, and salt. Add butter and mix until crumbly. Bake on a sheet pan at 300Β°F for 10 minutes, stirring halfway. Let cool and toss with sprinkles.
- Frosting: Beat butter, cream cheese, and vanilla until smooth. Gradually add powdered sugar until fluffy.
- Assemble: Place one cake layer on a board, brush lightly with milk soak, add frosting, and sprinkle cake crumbs. Repeat for remaining layers. Frost the top and add more crumbs and sprinkles.
- Chill at least 1 hour before slicing. Enjoy this nostalgic bakery-style birthday cake!
