Description

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 small can diced green chilies (optional)
  • Fresh cilantro for garnish (optional)

  1. Melt butter in a medium saucepan over medium heat.
  2. Whisk in flour and cook for 1–2 minutes to form a roux.
  3. Gradually whisk in milk and cream until smooth and slightly thickened.
  4. Reduce heat to low and add cheddar and Monterey Jack cheese, stirring until melted.
  5. Stir in garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and black pepper.
  6. Add diced green chilies if using and mix well.
  7. Keep warm on low heat and serve immediately with tortilla chips, garnished with fresh cilantro if desired.

Notes

For extra flavor, you can add a dash of hot sauce or diced jalapeños. This dip can also be kept warm in a small slow cooker for parties.
