  4. Slice cooked chicken into strips or bite-sized pieces.
  5. Assemble bowls: start with a base of cooked rice, then top with chicken, cherry tomatoes, cucumber, and red onion.
  6. Drizzle with additional lemon juice or olive oil and garnish with feta, olives, or parsley if desired.
