- Slice cooked chicken into strips or bite-sized pieces.
- Assemble bowls: start with a base of cooked rice, then top with chicken, cherry tomatoes, cucumber, and red onion.
- Drizzle with additional lemon juice or olive oil and garnish with feta, olives, or parsley if desired.
- Serve warm or at room temperature for a light, flavorful meal.
