  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk or heavy cream
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives or green onions (optional)
  • Additional cheese for topping (optional)

Instructions

  1. Preheat oven to 400°F (205°C). Grease a muffin tin or line with silicone cups.
  2. In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan, milk, melted butter, garlic powder, salt, and pepper.
  3. Mix until smooth and evenly combined. Fold in chives if using.
  4. Spoon the mixture into the muffin cups, filling about 3/4 full.
