- 2 tbsp olive oil
- 1 lb boneless skinless chicken breasts or thighs
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup chopped celery
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) potato gnocchi
- 1 cup fresh spinach, chopped
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)

- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until lightly browned on both sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery for 4–5 minutes until softened.
- Add garlic and cook for another 30 seconds.
- Pour in chicken broth and bring to a simmer.
- Return the chicken to the pot and cook for 10–12 minutes until fully cooked. Remove and shred.
- Add gnocchi to the soup and cook for about 3–4 minutes.
- Stir in heavy cream, shredded chicken, spinach, Italian seasoning, salt, and pepper.
- Simmer for 2–3 minutes until the spinach wilts and the soup thickens slightly.
- Serve hot topped with grated Parmesan if desired.
Notes
Rotisserie chicken works great for this recipe and saves time. If you prefer a thicker soup, stir in 1 tablespoon of flour with the vegetables before adding the broth.
