  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts or thighs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) potato gnocchi
  • 1 cup fresh spinach, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until lightly browned on both sides. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery for 4–5 minutes until softened.
  4. Add garlic and cook for another 30 seconds.
  5. Pour in chicken broth and bring to a simmer.
  6. Return the chicken to the pot and cook for 10–12 minutes until fully cooked. Remove and shred.
  7. Add gnocchi to the soup and cook for about 3–4 minutes.
  8. Stir in heavy cream, shredded chicken, spinach, Italian seasoning, salt, and pepper.
  9. Simmer for 2–3 minutes until the spinach wilts and the soup thickens slightly.
  10. Serve hot topped with grated Parmesan if desired.

Notes

Rotisserie chicken works great for this recipe and saves time. If you prefer a thicker soup, stir in 1 tablespoon of flour with the vegetables before adding the broth.
