Ingredients

  • 1 lb (450g) carrots, peeled and sliced into 1/4-inch thick rounds
  • 2 tbsp unsalted butter
  • 2 tbsp pure maple syrup
  • 2 tbsp brown sugar, packed
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Optional garnish: chopped fresh parsley or thyme

Instructions

  1. Bring a medium pot of water to a boil. Add carrots and cook for 4–5 minutes until slightly tender. Drain and set aside.
  2. In a large skillet, melt butter over medium heat.
  3. Add maple syrup and brown sugar, stirring until sugar is dissolved and sauce is smooth.
  4. Add carrots to the skillet, tossing to coat evenly in the glaze.
  5. Cook for 5–7 minutes, stirring occasionally, until carrots are tender and glazed.
  6. Season with salt and pepper. Garnish with parsley or thyme if desired.
  7. Serve warm as a delicious side dish.

Notes

For extra depth, add a pinch of cinnamon or nutmeg. Baby carrots can be used for convenience.
