  • 1 tsp unflavored gelatin
  • 2 tbsp water

  1. Prepare the cake base: Place the vanilla sponge cake into the bottom of an 8-inch springform pan and set aside.
  2. Make the mousse: Bloom the gelatin in cold water for 5 minutes, then gently melt it. Beat the cream cheese with sugar and vanilla until smooth. Stir in the mango puree and melted gelatin. In a separate bowl, whip the heavy cream to stiff peaks and gently fold it into the mango mixture.
  3. Assemble: Pour the mango mousse over the sponge cake and smooth the top. Refrigerate for at least 4 hours or until firmly set.
  4. Prepare the glaze: Bloom the gelatin in water, then melt it. Stir it into the mango puree with the sugar until smooth. Allow to cool slightly before pouring over the chilled mousse layer.
  5. Chill and serve: Refrigerate for another 1–2 hours until the glaze is set. Decorate with fresh mango cubes, whipped cream, mint leaves, or white chocolate curls before serving.

Notes

Use ripe Ataulfo or Kent mangoes for the sweetest flavor and brightest color. Chill the cake overnight for the cleanest slices. For an extra tropical touch, garnish with toasted coconut or passion fruit pulp before serving.
