- For the Tart Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1–2 tbsp cold water (if needed)
- For the Mango Curd:
- 1 cup mango puree (fresh ripe mango blended smooth)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tbsp fresh lemon or lime juice
- 4 tbsp unsalted butter, cubed

- Preheat oven to 350°F (175°C).
- Mix flour, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Add cold water as needed until dough forms.
- Press dough evenly into a 9-inch tart pan. Prick bottom with a fork.
- Bake for 15–18 minutes until lightly golden. Cool completely.
- In a saucepan over medium-low heat, whisk mango puree, sugar, eggs, and lemon/lime juice.
- Cook while stirring constantly until thickened (8–10 minutes). Do not boil.
- Remove from heat and stir in butter until smooth and glossy.
- Pour curd into cooled crust and smooth top.
- Refrigerate at least 2 hours until fully set before slicing.
Notes
For extra smooth curd, strain through a fine mesh sieve before pouring into the crust. Garnish with fresh mango slices, whipped cream, or toasted coconut. Store refrigerated for up to 3 days.
