  • For the Tart Crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 12 tbsp cold water (if needed)
  • For the Mango Curd:
  • 1 cup mango puree (fresh ripe mango blended smooth)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tbsp fresh lemon or lime juice
  • 4 tbsp unsalted butter, cubed

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Add cold water as needed until dough forms.
  3. Press dough evenly into a 9-inch tart pan. Prick bottom with a fork.
  4. Bake for 15–18 minutes until lightly golden. Cool completely.
  5. In a saucepan over medium-low heat, whisk mango puree, sugar, eggs, and lemon/lime juice.
  6. Cook while stirring constantly until thickened (8–10 minutes). Do not boil.
  7. Remove from heat and stir in butter until smooth and glossy.
  8. Pour curd into cooled crust and smooth top.
  9. Refrigerate at least 2 hours until fully set before slicing.

Notes

For extra smooth curd, strain through a fine mesh sieve before pouring into the crust. Garnish with fresh mango slices, whipped cream, or toasted coconut. Store refrigerated for up to 3 days.
