Tart Crust

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tbsp cold water (if needed)

Mango Curd

  • 1 cup mango puree (fresh or canned)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 2 tbsp fresh lemon or lime juice
  • 1/4 cup unsalted butter, cubed

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in cold butter until crumbly.
  3. Add egg yolk and mix until dough forms. Add cold water if needed.
  4. Press dough into a 9-inch tart pan. Prick bottom with a fork.
  5. Bake 15–18 minutes until lightly golden. Cool completely.
  6. In a saucepan over medium heat, whisk mango puree, sugar, eggs, egg yolks, and citrus juice.
  7. Cook while stirring constantly until mixture thickens (about 5–8 minutes).
  8. Remove from heat and stir in butter until smooth.
  9. Strain curd if desired for extra smoothness.
  10. Pour mango curd into cooled tart shell and refrigerate at least 2 hours until set.
  11. Garnish with fresh mango slices or whipped cream before serving.

Notes

Use ripe, sweet mangoes for the best flavor. The tart can be made a day ahead and kept refrigerated until serving.
