  • 3 pounds Yukon Gold potatoes, cut into bite-sized chunks
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup sliced green onions

  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

  2. Prepare the dressing: In a large mixing bowl, whisk together sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
  3. Combine: Add cooled potatoes, bacon, cheddar cheese, and green onions to the bowl.
  4. Mix gently: Fold everything together until the potatoes are evenly coated with dressing.
  5. Chill: Cover and refrigerate for at least 1 hour before serving.
  6. Garnish: Top with extra bacon, cheese, green onions, and parsley before serving.

Notes

For the best flavor, prepare the salad a few hours ahead of time. You can substitute part of the mayonnaise with Greek yogurt for a lighter version. Red potatoes also work well and hold their shape beautifully.
