- 3 pounds Yukon Gold potatoes, cut into bite-sized chunks
- 8 slices bacon, cooked and crumbled
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup sliced green onions
- 3/4 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)

- Cook the potatoes: Place potatoes in a large pot and cover with cold water. Bring to a boil and cook for 12–15 minutes, or until fork-tender. Drain and let cool.
- Prepare the dressing: In a large mixing bowl, whisk together sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
- Combine: Add cooled potatoes, bacon, cheddar cheese, and green onions to the bowl.
- Mix gently: Fold everything together until the potatoes are evenly coated with dressing.
- Chill: Cover and refrigerate for at least 1 hour before serving.
- Garnish: Top with extra bacon, cheese, green onions, and parsley before serving.
Notes
For the best flavor, prepare the salad a few hours ahead of time. You can substitute part of the mayonnaise with Greek yogurt for a lighter version. Red potatoes also work well and hold their shape beautifully.
