- 1 1/2 cups green or brown lentils, rinsed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 2 bay leaves
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
- Stir in garlic, cumin, and thyme. Cook for 1–2 minutes until fragrant.
- Add lentils, diced tomatoes, broth, bay leaves, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 30–35 minutes, until lentils are tender.
- For a creamier texture, blend part of the soup with an immersion blender.
- Remove bay leaves, adjust seasoning, and garnish with parsley or cilantro before serving.
Notes
This soup tastes even better the next day. Serve with warm bread or a side salad for a complete meal.
