  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
  2. Stir in garlic, cumin, and thyme. Cook for 1–2 minutes until fragrant.
  3. Add lentils, diced tomatoes, broth, bay leaves, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 30–35 minutes, until lentils are tender.
  5. For a creamier texture, blend part of the soup with an immersion blender.
  6. Remove bay leaves, adjust seasoning, and garnish with parsley or cilantro before serving.

Notes
